Dawn Nita is the founder and chocolate maker behind DWN Craft Chocolatier, a small-batch chocolate company grounded in craftsmanship, seasonality, and a deep respect for ingredients.
She began her career within the Mark McEwan Group, where she was introduced to the rigour and pace of professional kitchens. As a pastry chef at Jamie Kennedy Kitchens, she developed a deep understanding of cooking and baking through the Canadian seasons — working closely with local ingredients and learning how flavour shifts throughout the year.
Her focus turned to chocolate at Soma Chocolatemaker, where she learned how chocolate is made from bean to bar and developed the technical skills required to work with chocolate skillfully — from tempering and formulation to understanding cacao origin and flavour development. There, chocolate became not just an ingredient, but a medium. She later refined her skills at CXBO Chocolates, where she explored the visual and artistic side of chocolate.
Founded in 2020, DWN Craft Chocolatier reflects Dawn’s belief that chocolate should be both grounded and expressive — rooted in quality ingredients, shaped by technical experience, and crafted with care from bean to bar.
